Here's the part most people don't think about: mushrooms are roughly 90% water, and unlike a cucumber or a mango, they have no protective skin or peel covering them. Research on postharvest handling of edible fungi points to exactly this combination — high moisture content plus the absence of a protective outer layer — as the reason mushrooms are unusually prone to moisture loss and microbial spoilage compared to other produce. Add to that a respiration rate far higher than most fruits and vegetables, and you get a product that keeps changing after it's picked — losing moisture, texture, and quality by the hour, not just the day.
That's also why temperature matters so much before a mushroom ever reaches the shelf. Studies on postharvest storage note that a temperature rise of just 10°C can triple or quadruple a mushroom's respiration rate, accelerating every sign of aging you're about to learn to spot. A mushroom that sat in a warm delivery van for a few hours can look noticeably different from one that stayed cold the whole way.
None of this means mushrooms are fragile or hard to buy well — it just means the usual produce instincts (thump it, smell the skin, check the color) don't map directly. You need a slightly different checklist, and that's what farmers actually use.
This is the single best freshness indicator for button mushrooms, and most shoppers never do it. Turn the mushroom upside down and look at the thin membrane connecting the edge of the cap to the stem — this is the "veil." On a freshly picked mushroom, that veil is intact and the gills underneath are fully covered. As a mushroom ages, the veil stretches and eventually tears, exposing the gills. Produce grading references list an open, torn veil as a defining mark of a lower grade and an older mushroom — it's literally part of how mushrooms are graded for market. A closed veil is the closest thing mushrooms have to a "best before" indicator built right into the mushroom.
If the veil has opened — which is normal for larger or more mature mushrooms, and not automatically a problem — check the gills themselves. Fresh gills should be a pale cream to light pink color and packed tightly together. As mushrooms age, the gills darken toward brown or black and can start looking wet or matted rather than distinct and separate. Dark, damp-looking gills are a stronger sign of age than the color of the cap itself.
Pick one up. Fresh mushrooms should feel firm and dry to the touch, with a slight spring when you press the cap gently. What you don't want: sliminess, tackiness, or a soft, give-way feeling under light pressure. Sliminess in particular is one of the clearest signs of active bacterial growth on the surface, not just normal aging — it's a stage past "getting old" and into "should be discarded," not eaten.
Fresh button mushrooms should be a consistent white to light cream color without patches. Watch for small dark or brown spots (early aging — often still usable if minor), a general dulling or greying of the whole cap (further along), or a uniformly darker, almost bruised-looking surface (past its best). A little surface dirt is normal and not the same as spotting — mushrooms grow in compost, and light dirt brushes off. Dark spotting doesn't.
Fresh mushrooms carry a mild, earthy smell — sometimes almost nothing at all. Any sour, musty, fishy, or sharply ammonia-like smell is a clear sign the mushroom has already started breaking down, even if it still looks reasonably okay. Trust your nose over your eyes here — smell tends to change before appearance does.
The cut end of the stem tells you how long ago the mushroom left the farm. Fresh cuts look pale, dry, and relatively clean. A stem end that's turned brown, looks wet, or feels tacky has been sitting for a while, even if the cap up top still looks presentable.
A few signs mean skip that punnet entirely, no second-guessing:
Visible mold — fuzzy white, green, black, or pink patches. This isn't a "cut around it" situation; mold-affected mushrooms should be discarded whole.
Slimy or sticky surface — a clear marker of bacterial spoilage, not just aging.
Strong sour, ammonia, or "off" smell — trust this over how the mushroom looks.
Mushy, soggy texture — if it dents and stays dented under light pressure, it's well past usable.
Buying fresh is half the job — how you store them decides how long that freshness lasts.
Skip the sealed plastic. Mushrooms keep respiring after harvest and give off moisture as they do. In a sealed container or plastic bag, that moisture has nowhere to go, condenses on the surface, and creates exactly the damp environment that causes sliminess and faster spoilage.
Use a paper bag or a breathable container in the fridge. Paper absorbs the excess moisture while still letting air move, which is why extension food-safety guidance consistently recommends it over airtight packaging for mushrooms specifically.
Don't wash until you're ready to cook. A light brush to remove visible dirt is fine; a rinse-and-store routine adds moisture that shortens shelf life. Rinsing briefly right before cooking is fine — it's rinsing-then-storing that causes problems.
Buy what you'll use in a few days. Mushrooms are one of the faster-spoiling items in the produce aisle by nature, not because of anything you did wrong. Smaller, more frequent purchases beat one large one sitting in the fridge.
Keep them cold and away from strong-smelling produce. Refrigeration slows the respiration that drives spoilage; mushrooms also pick up odors easily, so keeping them away from strong-smelling items in the fridge helps preserve their own mild aroma.

You don't need to be a farmer to buy mushrooms well — you just need to check different things than you would for other produce. Flip it over and look at the veil first; that one habit alone puts you ahead of most shoppers. Back that up with a look at the gills, a feel for firmness, a scan for spotting, a quick smell, and a glance at the stem end, and you'll rarely bring home a punnet that lets you down. Once they're in your kitchen, a paper bag in the fridge and a "use it in a few days" mindset does the rest.
