Multiple independent research groups have studied how vitamin D levels relate to blood vessel function in people with diabetes. Work out of Washington University School of Medicine found that adequate vitamin D levels were associated with less clogging of blood vessels in diabetics, while insufficient levels were linked to immune cells binding to vessel walls and trapping cholesterol. Separately, researchers at Emory University found that people with vitamin D deficiency showed vascular dysfunction comparable to what's typically seen in people with diabetes or high blood pressure — even when the participants themselves didn't have either condition. Vitamin D appears to support the layer of endothelial cells lining blood vessels, which controls whether vessels relax or constrict.

Magnesium deficiency is common in people with diabetes, and researchers are increasingly treating it as a modifiable risk factor for cardiovascular complications rather than a side detail. Studies have linked low magnesium levels in diabetics to impaired blood clot regulation, increased vascular sensitivity to hormones that raise blood pressure, and a higher long-term risk of heart failure and related complications. Some clinical work has also shown that magnesium supplementation can improve blood vessel relaxation (measured directly via artery function tests) in older adults with diabetes.
B12's role is a little different — it shows up most clearly in diabetic neuropathy, nerve damage that's closely tied to the health of the small blood vessels supplying those nerves (called the vasa nervorum). This is especially relevant for anyone on long-term metformin therapy, which is well documented to reduce B12 absorption over time. Research has found B12 deficiency to be significantly more common in diabetics who have neuropathy than in those who don't, and B12 supplementation has been studied as a way to ease neuropathic symptoms in deficient patients.
Most of this research centers on blood levels of these nutrients — not on any single food.
